(USA-ME-SEBASCO ESTATES) Executive Chef/Culinary Operations
Mid-Coast Maine's premier destination resort is recruiting for an experienced Executive Chef to manage our culinary operations and staff on a daily basis to ensure a consistent, high quality food product for our restaurants and catering operations. The Exec Chef is responsible for meeting our high standard of quality for all food preparation, production and cost control for our restaurants and banquet facilities. This is a working position and will be responsible to hire, train, supervise, schedule and participate in the daily activities of our culinary staff, both front and back of house. We operate two restaurants: * Ledges Pub and Patio (120 seats) - traditional Maine Fare of chowder, lobster, seafood and sandwiches in a causal setting, overlooking Sebasco Harbor * Pilot House Restaurant (120 seats) - Bistro style dining featuring fresh ingredients, creative specials and specialized wine list - with spectacular sunset, harbor views. Breakfast is also served in this venue. Our F & B business also includes: * Meeting/Banquet/Wedding facilities (up to 250 for dining) * Special dining events - Pool Lawn Blueberry Pancake Breakfast, Harborside Lobster Bake, and Sunday Night Family Dining event. Prior full-service, hotel or resort experience required, culinary degree and all necessary certifications/ or any combination of education and experience equivalent that provides the required knowledge, skills, and abilities is preferred. Ability to attract, train, effectively supervise while building morale and a team atmosphere is a necessity. Seasonal operations experience a plus.
